Spinach Avocado Pesto

This is a quick pesto that allows you to sneak healthy fats and lots of greens into what looks like a pretty standard fare pasta dish. Use hidden veggie pastas to pack even more nutritional punch into the meal!


Spinach Avocado Pesto

  • 1 avocado
  • 1/3 lb fresh spinach
  • 10-15 basil leaves
  • 5 garlic cloves
  • 2 tsp kosher salt

Combine together with an immersion blender, and be patient. Because there isn’t any liquid in it, it will be slow going until the spinach is broken down and the avocado is smooth! Toss with your favorite pasta and serve.
