Egg Parmesan Sandwich

This one is the direct result of my habit of buying too many eggs at the farmer’s market. I get a dozen duck and a dozen chicken eggs for $5, and I can’t help myself. It’s a play on the duck eggs poached in tomato sauce I did a few weeks back, this time with the addition of fresh mozzarella cheese and garlic bread.


Egg Parmesan Sandwich

  • 4 duck eggs
  • 4 slices fresh mozzarella
  • marinara sauce
  • 1 loaf crusty bread
  • 1 stick butter
  • 4 cloves of garlic
  • 1 tsp of parsley

Preheat oven to 350°F. Fill a casserole dish halfway with marinara sauce, then nestle four duck eggs into the sauce. Place in the oven until whites are cooked, then top with cheese; place back in the oven until the cheese is thoroughly melted. In a food processor, blend butter, garlic and parsley and spread on two halves of crusty bread. Place on a cookie sheet and bake alongside eggs until the butter has melted and the crust has browned a little. Serve eggs on garlic bread for open-faced sandwiches, or place between two pieces of garlic bread if you want to try to eat them with your hands.
