Mango Ginger Salmon

The beauty of this one is its simplicity. I keep frozen fruits in my freezer for healthy smoothies, and my favorite smoothie ingredient is mango. Toss it in the blender with some soy sauce, fresh ginger, and garlic instead of soymilk and berries, and you’ve got a fresh, tropical glaze for salmon instead!



Mango-Ginger Salmon

  • 1 lb salmon fillet
  • 2 c. frozen mango pieces (by all means, if you have fresh, use it!)
  • 1 tsp grated ginger
  • 3 garlic cloves
  • 1 tbsp black soy sauce
  • salt and pepper to taste

Preheat oven to 350°F. Blend together mango, ginger, garlic and soy sauce. In a shallow baking pan lined with foil, place salmon skin-down and cover with glaze. Bake 25 minutes or until salmon is done.
