Pulled Duck Soft Tacos (with Raspberry Barbecue Sauce)

Don’t be like me, folks. Seed your raspberries! It’s an extra step, but it is NOT a waste of time. This was a delicious dish but I spent so much time picking the seeds from my teeth afterwards that I almost forgot how good it tasted!

Pulled Duck Soft Tacos (with Raspberry Barbecue Sauce)

  • leftover duck (from this recipe)
  • well-seasoned stock or broth
  • one bag of frozen raspberries, thawed and pureed
  • 1 c tomato ketchup
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp chili powder
  • 1/4 c brown sugar
  • 6-8 drops of liquid smoke
  • salt & pepper to taste

Cook leftover duck (or fresh, if you like) in stock or broth until falling apart tender. Remove from liquid, shred duck meat and set aside. Combine remaining ingredients in a bowl, tasting often. Mix together with duck meat, or use as a topping. Serve on soft flour tortillas.
