Butternut Squash Pasta Sauce

I’m getting excited for my own garden, and I’m sure you’re all getting sick of me cooking with the same veggies over and over — especially squash! But this pasta sauce is a great replacement for a heavy cheese sauce or a tomato-based alternative, flavorful and colorful. Actually, it kind of looks like a really cheesy mac and cheese!

Butternut Squash Pasta Sauce

  • 1 butternut squash
  • olive oil, salt and pepper
  • 1/2 c. cream
  • 1/3 c. parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sage
  • chicken broth to thin

Preheat oven to 350°F. Halve butternut squash, clean out seeds and guts, and drizzle flesh with oil, salt and pepper. Place face-down on a baking sheet and bake about 40 minutes or until flesh is soft and skin begins to bubble. Allow to cool and scoop into a saucepan. Add other ingredients and blend with an immersion blender until it reaches the desired consistency. Top your choice of pasta with sauce, a bit of parmesan cheese, and some parsley.
