Cheesy Shepherd’s Pie

What I grew up eating and calling Shepherd’s Pie is a far cry from the traditional Irish dish, which consist of lamb, vegetables, and a mashed potato crust. It’s a hearty casserole and a great make-ahead meal.



Cheesy Shepherd’s Pie

  • 1 lb ground lamb
  • 1 lb mashed potatoes
  • 8 oz shredded cheddar
  • 1 onion
  • 1 tbsp tomato paste
  • 1/2 c carrots, chopped
  • 1/2 c peas
  • 1 tsp thyme
  • 1 tsp parsley
  • 1 tsp oregano
  • 4 tbsp butter
  • 4 cloves garlic
  • 1 tbsp Worchestershire sauce

Peel, cook and mash the potato, with butter (salt and pepper to taste.) Set aside and preheat oven to 350°F. In a skillet, brown the lamb. Add onion, garlic, carrots and peas. Season with parsley, oregano, thyme, Worchestershire and tomato paste. Pour into a 9×9 baking dish and top with mashed potatoes to form a crust. Sprinkle cheese on the top and bake until cheese is melted and slightly browned, about 30 minutes.
