This simple pilaf is easy to make and makes a tasty side to almost anything. We had ours with tender but inexpensive blade steaks and canned corn, sauteed with olive oil, butter and red pepper flakes.
Simple Quinoa Pilaf
- 2 c. quinoa
- 3 1/2 c. stock (I used Knorr’s Homestyle chicken stock)
- 1/2 small onion, minced
- 1/2 pepper (I used green, only because that’s what I had on hand)
- 2 tbsp. butter
Melt your butter in a saucepan. Add the onion and pepper, and when they begin to soften, add the quinoa. Toast until it begins to smell nutty, and then add the stock. When the stock is gone and the quinoa has burst and is tender, it’s done.
