Today, in honor of World Nutella Day and National Pancake Day, I decided to make some silver dollar pancakes with Nutella mixed into the batter for dessert.
We tried filling the first few with Nutella (well, actually, Nature’s Place Hazelnut Spread, which Ian reviewed, because I used the last of the Nutella in the batter) but we found that it burned quickly and just sort of blended in with the batter, so we gave up on that. They were very tasty on their own, but even better with a smear of hazelnut spread on top, and next time I will probably make a syrup from melted butter and hazelnut spread to drizzle on top. My recipe uses Bisquick, or the generic equivalent baking mix, but feel free to be inspired to mix some Nutella into your favorite pancake mix and see what you think.
Nutella Silver Dollar Pancakes
2 c. baking mix (Bisquick or generic)
1 c. milk
4 tbsp hazelnut spread (Nutella or generic)
Whisk together until smooth; spoon onto hot, greased or nonstick griddle. When bubbles in the batter begin to form and the bottom is crisp, turn over. Remove from heat when cooked through, and serve with butter and more hazelnut spread.
