Today I had the pleasure of sitting for my friend Harmony’s two youngest kids, Sam and Muriel. They’re super kids, and they came with a perk: Harmony gave me a budget, and free reign over her kitchen. The kids and I did some quick grocery shopping, and I made up a batch of beef and broccoli in the crock pot. Honestly, I’d rather do this in a wok — it would be much faster and you’d get a better brown on your beef. I’m going to include two sets of directions: the way I did it this time, and the way I’ll do it the next time I make this.
Beef & Broccoli
- 1 lb any kind of beef, sliced very thinly
- 1/4 c soy sauce
- 3 tbsp apple cider vinegar
- 1 tbsp brown sugar
- 2 tsp sesame oil
- 2 cloves garlic, smashed and minced
- 1/2 tsp red pepper flakes
- 1 lb bag thawed broccoli florets
Crockpot: Mix liquid and spices in crock pot. Toss meat in sauce to coat, then cook on low for 3-6 hours, or until beef is tender. Add broccoli about an hour prior to serving; serve over white or brown rice.
Wok: Heat sesame oil in wok; add garlic and red pepper flakes and stir until fragrant. Add beef, soy sauce and vinegar, stirring well until beef is cooked. Add broccoli and mix well to coat with sauce. When broccoli has reached the desired tenderness, serve over white or brown rice.
