Chicken Pot Pie with Biscuits


I am ashamed to admit that I made it to the ripe age of 29 without ever having made chicken pot pie! My mother has made it for as long as I can remember, and it’s always been a family favorite. Mom typically makes it with a pie crust on top, instead of biscuits, but I’ve personally always been a fan of biscuits instead, so that was what I decided to do when I made this yesterday. This quantity was intended to feed to my director, her family, and their assorted house guests, visiting for the duration of the production — in short, about half the cast of RENT — with a smaller baking dish leftover for my own family, so unless you’re feeding an army, you may want to cut the quantities by half.

Having never made pot pie before, I started out by looking at a few recipes; when they presented me with the idea of cooking my chicken in chicken buillion, I balked, and decided to try it my own way and hope for the best.

Chicken Pot Pie with Biscuits


  • 4 boneless, skinless chicken breasts
  • 4 skinless, bone-in chicken thighs
  • 3 stalks celery, chopped
  • 1 onion, chopped
  • 3 carrots, chopped
  • 5 garlic cloves, crushed
  • 2 bay leaves
  • red pepper flakes, to taste


  • reserved liquid
  • 3 carrots, chopped
  • 2 medium potatoes, chopped
  • 1 small onion, chopped
  • 2 c peas
  • 2 c green beans
  • 2 c flour, whisked together with equal parts water
  • salt and pepper to taste


  • 6 c bisquick
  • 1.5 c milk

Preheat oven to 350°F. Place all chicken in a soup pot with aromatics and red pepper flakes. Cover with water and boil until chicken is tender. Remove chicken, cool and cut into bite-sized pieces; strain liquid and reserve. Return liquid to a boil, and add in chicken, carrots and potatoes. If using canned green beans and peas, wait to add; if using fresh or frozen, add now. When potatoes and carrots are tender, add in flour mixture and cook until thickened. Pour into baking dishes. Mix together bisquick and milk and drop on top of chicken and gravy mixture. Bake until biscuits are golden brown and gravy is bubbling.
