One of my favorite things to do when I’m grocery shopping is get a bit of a new, interesting deli salad and then go home and try to duplicate it. Sometimes they’re easy, other times they’re not. This one was one of the easy ones, though the original included — and I will probably include, when I make it again — about 1 packed cup of baby spinach, roughly chopped. If you’re feeling more adventurous, try making your own Caesar dressing. I plan to try it soon.
Chicken Ceasar Pasta Salad
- 1 lb farfalle
- 1 lb chicken, cooked and chopped
- 1 can black olives, drained and sliced
- 1 jar Caesar dressing
- 1 c parmesan, shredded or shaved
Cook farfalle according to package directions until just barely al dente. Toss all ingredients together, chill, and garnish with a bit more parmesan.
