Quiche

Quiche is totally versatile. Essentially, it’s a simple crust, filled with a cheesy egg mixture. It can contain vegetables, meat, and other savory fillings, and can even be made sweet as a dessert. It’s an easy way to make something special for breakfast or brunch (or even lunch or dinner!) without exerting a lot of extra energy. I like to make mine with onions, garlic, cheddar and bacon.

Bacon & Cheddar Quiche

Crust:

  • 1 c flour
  • 1/2 tsp salt
  • 1/4 c olive oil
  • 1/4 c ice water

Whisk together oil and ice water, and mix with salt and flour. Press into a standard 9in pie plate.

Filling:

  • 5 eggs
  • 1 c milk or cream
  • 1-2 c shredded cheddar
  • 8-12 slices of bacon, cooked and chopped
  • 2 cloves of garlic, minced
  • 1 small onion, minced

Preheat the oven to 350°. Sauté garlic and onions until soft, and set aside to cool. Whisk together eggs and milk, and stir in cheese, bacon and sautéed garlic and onion. Pour into crust and bake for 30-40 minutes, or until filling is set and browned on the top.
