A dessert I first made for a Greek-themed pot luck, this treat has the distinction of being the only food mentioned in not one but two Beatles songs (sort of.) It’s also made with my favorite cheese — ricotta! Traditionally, it’s actually made with a soft Greek cheese called Myzithra, but ricotta will do in a pinch.
- 3 packages mini phyllo shells
- 1 lb ricotta cheese
- 3 eggs, lightly beaten
- 1/2 cup honey
- zest of one lemon, grated
- 3 tbsp. flour
- 1/4 cup sugar
- ground cinnamon and more honey for serving
Preheat oven to 350ºF. Combine ricotta cheese, eggs, honey, lemon zest, flour, and sugar. Mix well and pour into phyllo shells. Bake until filling sets, drizzle with honey and sprinkle with cinnamon.
