Pork Sausage

I made pork sausage with the intention of using it to make Scotch eggs, but I had a bit leftover. Tastes great with a little country gravy… I wish I had made biscuits, too! The bits of carbon clinging to the patties are panko breadcrumbs that remained in the oil from the Scotch eggs.


Pork Sausage

  • 2 lbs ground pork
  • 2 tsp ground sage
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1 1/2 tsp pepper
  • 1/2 tsp cayenne pepper
  • 1 tbsp brown sugar

Combine all ingredients in a bowl; mix well. Form into patties or logs and brown in a sauce pan with a bit of oil or non-stick spray.
