Sometimes all you have time (or energy) for is a quick, toss-it-together meal, with steps that are simple and very little prep. I struggle with fibromyalgia, and I was in considerable pain yesterday, so in order to get supper on the table (admittedly a bit late; better late than never, right?) I went back to an old favorite.
Chicken Pasta Fiesta (aka Hot Mess)
- 1 lb medium shell pasta (or Wacky Mac)
- 2 c sour cream
- 6 oz shredded cheddar
- 1 1/2 c salsa or picante sauce
- 3 chicken breasts
Pretty easy. Cube and cook the chicken however you’d like; cook the pasta according to package directions. Mix in sour cream, cheddar and salsa. Spicy, creamy, hearty and tasty.
