Potato Chip-Crusted Chicken Tenders

A great way to make use of leftover potato chips after a party — or a great substitute for bread crumbs in a pinch — is to throw those chips in the food processor, season them, and use them as breading for chicken. Because the chips are already fried, they become a crispy crust for some seriously moist meat! This isn’t particularly original, but it sure was tasty.


Potato Chip-Crusted Chicken Tenders

  • 1 lb chicken tenders (pre-cut, or make your own strips from whatever parts you prefer)
  • 3 c potato chip crumbs
  • 1 tbsp dried parsley
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 2 eggs

Preheat oven to 350°F. Pulse potato chips in the food processor to make crumbs, Add in parsley, garlic powder and chili to combine, and pour into a shallow bowl or deep plate. In a second container, beat eggs. Dip chicken tenders in egg, then roll in crumbs. Bake for 35 minutes or until done.
