Bacon Chocolate Chip Cookies

This recipe was born while driving back from Portland with a car full of friends. It was a rare occasion in which I was sitting not behind the wheel, but in the back seat with Rose, who raises quality poultry, pork and beef at Emma’s Family Farm. We made our notion a reality less than a week later, using bacon she’d raised herself! Just like putting a sprinkle of sea salt on top of chocolate chip cookies, the bacon’s salty flavor complemented the sweetness of the dough and the chips. You will notice that unlike most cookie recipes, there’s no salt in this one, and you want to be certain to use unsalted butter, because the bacon brings the salt factor on its own. Delicious!


Bacon Chocolate Chip Cookies

  • 2 1/4 c flour
  • 1 tsp baking soda
  • 2 sticks unsalted butter
  • 3/4 c granulated sugar
  • 3/4 c packed brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 c semi-sweet chocolate chips or chunks
  • 1 c finely chopped bacon

Preheat oven to 375° F. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chips and bacon. Spoon onto ungreased baking sheets and bake for 9 to 11 minutes or until golden brown.
