Sloppy Joes

Sloppy joes are a perennial favorite, but this recipe makes Manwich look like a sissy. From the onions and peppers to the tomato paste, ketchup and corn, it’s another of my sneaky ways to get my family to eat their veggies. Eat it open-faced with a fork, or sandwich it between a bun and risk your shirt. I dare you.


Sloppy Joes

  • 1 lb ground beef
  • 1 red bell pepper, chopped
  • 2 serrano chili peppers, minced
  • 5 cloves of garlic, minced
  • 1 medium onion, chopped
  • 1 can corn. drained (or 1 c frozen, thawed)
  • 1 6 oz can tomato paste
  • 1/2 c ketchup

Over medium heat, sauté chopped peppers, chilis, garlic and onion in oil until soft. Add meat to pan and cook through. Stir in tomato paste, ketchup and corn. Serve on hamburger bun or other similar roll.
