Spicy Thai-Inspired Drumsticks with Peanut Sauce

This is a recipe I accidentally stumbled on. I’d grabbed some drumsticks out of the fridge, and decided I wanted to do something Thai or Thai-inspired with them, so I started throwing together ingredients from other Thai dishes I’ve made, and came up with the marinade.Then, I had so much marinade left that it seemed a waste to throw it away, so I heated it up on the stove (because it had been in contact with raw chicken!) and added some peanut butter, and got a great peanut sauce to serve with it.


Spicy Thai-Inspired Drumsticks with Peanut Sauce

  • 6-8 drumsticks
  • 1 can coconut milk
  • 1 tbsp soy sauce
  • 2 tsp rice wine vinegar
  • 1 tbsp oyster sauce
  • 1 tbsp grated ginger
  • 1 tbsp minced garlic
  • 2 tbsp chili paste
  • 1 tbsp curry powder
  • 1/2 c peanut butter

Mix together coconut milk, soy sauce, rice wine vinegar, oyster sauce, ginger, garlic, curry powder and chili paste. Marinate chicken in the mixture for at least one hour. Preheat oven to 350°F, and bake for 30 minutes or until cooked. Meanwhile, heat leftover marinade in a saucepan over medium heat. Add peanut butter and blend well. Serve over garlic rice.
