Pulled Pork & Barbecue Sauce

The trick to delicious pulled pork is to cook it low and slow. With a crock pot, it’s easy to make tender, juicy pork that falls apart. Serve it on a bun with your favorite barbecue sauce, or make your own. Another great idea is pulled pork pizza. Layer a pizza crust with barbecue sauce, pulled pork, and mozzarella cheese, and bake until the crust is cooked and the cheese is melted.

This is a family favorite. There aren’t a lot of dishes my dad actually requests — in fact, the question “What do you want for supper?” is usually met with an “I don’t know, whatever you want to make.” but this is one of the few things he asks for, and one of the only ways I can eat pork.

Pulled Pork

  • 1 5 lb pork roast
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp celery salt
  • 1 tsp nutmeg
  • 1 tsp clove
  • 1 tsp cinnamon
  • 1 tsp cayenne
  • 1 tsp paprika
  • 2 tsp ancho chili powder
  • 1/2 c brown sugar
  • 3 bay leaves
  • 2 onions, sliced

Mix dried spices (not including bay leaves) together with brown sugar, and rub on all sides of the pork roast. Wrap the roast in plastic wrap and refrigerate for three hours. In a crock pot, layer the sliced onions over the bottom. Place the unwrapped roast on top of the onions, and throw in the bay leaves. Put three or four cups of water into the crock pot, set it on low, and leave it for 8-10 hours. Transfer roast to cutting board; discard liquid, but if desired, save onions to serve with pork. ‘Pull’ by tearing meat into thin shreds with two forks or your fingers, discarding fat and bone. Toss with barbecue sauce and serve on hamburger buns, bulky rolls, or similar.

Barbecue Sauce

  • 3 c ketchup
  • 1/2 c yellow ballpark-style mustard
  • 1/2 c cider vinegar
  • 1/2 c Worcestershire sauce
  • 2 tbsp ancho chili powder
  • 2 tsp garlic powder
  • 1 c brown sugar
  • 1 tsp kosher salt
  • 1/4 c honey
  • 2 tsp hot sauce
  • a few drops liquid smoke

Whisk all the ingredients together, simple as that!
