Here is the most basic of comfort foods: Mac and cheese. Everyone makes the same basic dish with their own comforting, nostalgic twist. Some use fancy cheeses, some include ham or browned ground beef, some top them with crunchy breadcrumbs, browned in the oven. For me, it will always consist of layers of cooked macaroni, stewed tomatoes (which I used to hate, even in this dish!) and American cheese slices. This is the way my mother made it, and her mother before her, and I hope some day my own children will remember this fondly as their mom’s mac and cheese as well.
Mom’s Mac and Cheese
- 1 lb box macaroni, prepared according to package directions
- 1 can stewed tomatoes, drained
- 1/2 lb American cheese slices
Mix together macaroni and stewed tomatoes. Fill a baking dish halfway with the mixture, layer with cheese, add remaining mixture and top with more cheese. Bake until cheese is thoroughly melted.
